How to Make a Delicious Vegetarian Nut Roast
We made the decision to go vegan at the end of November 2015. We were due to spend Christmas with my family, and the news that we wouldn’t be tucking into the turkey with everyone else sent my mother into a tailspin.
“So you’re not eating meat anymore? Can you eat cheese? What about goat’s cheese?”
Luckily M&S came to the rescue with a nut roast!
Over the last eight years, I have experimented with various “main events” for our Sunday dinner, and keep coming back to the humble nut roast.
This recipe is full of whole foods, highly nutritious and, in my opinion, very tasty. And super quick and easy to make!
Ingredients
You will need:
- 400g mixed nuts
- 100g dried fruit (raisins or dried apricots work well)
- 1 large onion
- 2 cloves garlic
- 1 courgette
- 1 stick celery
- 2 medium carrots
- 4 closed cup mushrooms
- 1 egg
- 1 tbsp mixed herbs
- salt and pepper to taste
Method
- Preheat your oven to 180 degC.
- Roughly chop all the vegetables, then and all your ingredients to the bowl of your food processor.
3. Blend to a coarse paste. If it looks particularly wet at this stage, you can add a tbsp of wholemeal flour or breadcrumbs.
4. Grease an oven proof dish and press your mixture firmly into it.
5. Bake in the oven for 30-40 minutes, until golden brown on top.
6. Serve with roast potatoes and your choice of seasonal vegetables. Delicious!
