Recipe: How to Make a Vegan Creamy Cauliflower Soup

Recipe

Serves 6 | Prep time: 10 minutes | Cooking time: 1 hour 10 minutes

Ingredients

  • 1 tbsp olive oil (can sub with 1 tbsp water and 1 tbsp soy sauce, if desired)
  • 1 large brown onion, finely diced
  • 3-4 cloves garlic, crushed or finely chopped
  • 2 sticks celery, chopped
  • 1 medium carrot, peeled and chopped
  • 1 yellow bell pepper, deseeded and chopped
  • 1 large head cauliflower, cut into florets and chop the stem into chunks also (or alternatively, 900g frozen cauliflower)
  • 1 cup cashews
  • 1.5 litres vegetable stock
  • 3-4 tbsp nutritional yeast (optional)
  • Salt and pepper, to taste

Method

  1. Warm the olive oil in a large saucepan, then add the onion and lightly fry for 4-5 minutes until starting to golden.
  2. Add the garlic and fry for a further 1-2 minutes until it starts to become fragrant.
  3. Add the celery, carrot, pepper and cauliflower stalks, along with 200mls of stock. Cover the pan with a lid and allow the vegetables to steam for 10 minutes until they begin to soften.
  4. Add the cashews and the remaining stock. Cover again with the lid and bring to the boil. Simmer for 40 minutes, until the cashews have softened.
  5. Add the cauliflower florets and continue to simmer for a final 10 minutes, until the florets are cooked.
  6. Stir in the nutritional yeast, if using.
  7. Blend the soup until smooth using either a jug or immersion blender.
  8. Season to taste before serving hot with fresh bread. Top with a few cubes of pre-cooked tofu, if desired.
